Marinade is a strongly-flavored liquid mix used for meat and fish, and sometimes vegetables, to give them some flavor or the marinade before cooking it. It is a commonly used technique in all culinary cultures although the ingredients used range from seasoned yoghurt to flavored oils.
Ingredients
- 1kg mutton chops, cut
- 100gms onions
- 20gms chilies
- 2gms garlic
- 45gms tomatoes
- 125ml olive oil
- Juice of 2 lemons
- 15gms salt
- 5gms pepper
Method
- Beat mutton chops with a mallet or the wooden handle of a knife and keep aside.
- In a blender, add onions, chilies, garlic, tomatoes, and blend to taste.
- Now add salt, pepper, lemon juice and olive oil to the blended mixture and mix well.
- Add lamb chops to the marinade and keep aside for at least 4 to 6 hours.
- Grill or pan fry well on both sides till cooked.
- Serve hot.
